Ani Phyo's Spicy Bok Choy Soup
Warm weather, for me, is the perfect time to savor my favorite raw recipes and Ani Phyo's are delicious and super simple !!! I love love love avocado's too. They are a great source of glutathione which is the master antioxidant and they are full of vitamin E.
INGREDIENTS:
1 cup bok choy, chopped, loosely packed
1 cup cucumber diced
1/2 cup avocado, from 1/2 whole
1 tablespoon lemon juice
1 tablespoon miso, unpasteurized, any color
1/4 jalapeno pepper, or pinch cayenne
1 to 2 cup filtered water for desired consistency
1 tablespoon ginger
1 pinch black pepper
DIRECTIONS:
Place all ingredients, including ginger into a high speed blender and blend until smooth
Best enjoyed immediately
