Low Carb Un-stuffed Cabbage Roll Soup
Lin and I are now on day 17 of our South Beach lifestyle removing carbs from our lives. It surprisingly has been fairly easy all though I am still yearning for chocolate cookies!!! And I am pretty tired of eggs. The other day I really wanted something that reminded me of comfort food and I remembered a recipe I had tried at a holiday brunch. It was super super low calorie and packed full of flavor and comfort! The best part is you can let the slow cooker do all the work for you too on a busy day. I am also not really a cabbage fan at all but it's highly recommended on our diet plan so I have been getting creative with cabbage recipes.
Ingredients:
2 tbsp extra virgin olive oil
2 garlic cloves
1/2 chopped white onion or yellow
1/2 cup shallots
2 pounds ground beef
1 tsp dried parsley
1/2 tsp dried oregano
1 tsp salt
1 tsp pepper
16 ounces diced tomatoes
1/2 head cauliflower or two cups riced
5 cups beef broth, low sodium
1 small white cabbage sliced (white) I used purple and wish I hadn't
INSTRUCTIONS:
Heat olive oil on medium heat. Add Garlic
Add onions and shallots and cook until softened
Add ground beef and cook until browned
Add seasonings to beef and tomatoes
Add the riced cauliflower to the beef mixture and stir until coated
Pour the beef into crock pot
Pour beef broth into crock pot and add cabbage
Stir to combine everything
Cook on high for three hours or low for 6 hours. If you do not have a crock pot, use a dutch oven or heavy soup pot and simmer on low covered for about an hour until cabbage is tender
