Grilled Chicken with Asian Slaw & Noodles

I am on day 10 and there hasn't been a single thing that I have made that didn't taste amazing. The recipes are super easy to create too. Here is one of my favorites!!
GRILLED CHICKEN with ASIAN SLAW & NOODLES RECIPE:
INGREDIENTS:
(serves 2)
31/2 oz rice vermicelli noodles
oil spray
7 oz boneless skinless chicken breast, cut into thick strips
YOGHURT LIME DRESSING
7 oz low-fat plain yoghurt
2 tablespoons chopped fresh cilantro
2 teaspoons lime juice
3 teaspoons sesame oil
2 teaspoons salt-reduced tamari or soy sauce
2 teaspoons honey
Pinch of ground ginger
ASIAN SLAW
1 medium carrot
1 3/4 oz green cabbage, shredded
1 3/4 oz red cabbage, shredded
2 scallions thinly sliced
1/2 medium red bell pepper, seeds removed and thinly sliced
1 medium mango, peeled and fresh sliced. Just buy frozen if not in season.
2 tablespoons sultanas
2 tablespoons chopped fresh mint
DIRECTIONS:
Place the noodles in a heatproof bowl and cover with boiling water. Leave for ten minutes, then loosen the noodles with a fork. Drain and refresh under cool running water. Drain well and set aside to cool.
Heat a large non-stick fry pan over medium heat and spray lightly with oil spray. Add the chicken strips and cook for 3-4 minutes on each side or until cooked through. Set aside to rest.
To make the yoghurt lime dressing, whisk the yoghurt, cilantro, lime juice, sesame oil, tamari or soy sauce, honey, and ginger in a small bowl.
To make the Asian slaw, place the carrot, green and red cabbage, bell pepper, mango, sultanas, and mint in a large bowl. Add the noodles. Drizzle over half of the dressing and toss gently to combine.
To serve, place the Asian slaw on two serving plates. Top with the chicken and drizzle over the remaining dressing.
