Always lovely to visit Chokola Bean To Bar, Op.cit Books, Taos Pizza OutBack, and the very new-to-me Manzanita Market!! I look forward to trying their sister restaurant The Love Apple 🍎 ( la pomme d’amour )
Chokola is a small-batch, organically crafted bean-to-bar chocolate maker located in Taos, New Mexico. They are passionately dedicated to the Art of Chocolate Making! To begin the process, cacao pods are removed from the tree of cacao farms. Then they are cut in half and the cacao beans are extracted from inside the pods. The beans are then stored in a state of fermentation. To stop the fermentation, the beans are set to dry out in the sun.
Once the cacao beans are finished sun drying, they are packaged in sacks that weight between 30 to 75 kilos that are then sent to our store in Taos, New Mexico. Once the cacao beans arrive in Taos, they are hand picked and carefully roasted in a gentle manner. Once roasted, the cacao beans are crushed and separated from their shells leaving them at a stage which we call nibs. The nibs are then placed in a machine that continuously grinds them for about 72 hours.
After the stone grinding process is finished, the nibs, which have been turned into chocolate, are transformed into blocks that are left to age. After the aging process is done, the chocolate is melted and tempered. To finish the process, their chocolate is poured into molds from which their exquisite chocolate bars are born. Also treat yourself to an iced chocolate! (I get iced in the summer and hot in the fall)

Op. Cit Books- They specialize in new books, modern first editions, children's books, cookbooks, and mysteries. I always find something here and this trip I found two beautiful cookbooks!!! I also bought some gorgeous postcards to send to friends and family!
Taos Pizza Outback- They serve fresh, handcrafted gourmet pizzas, pastas, salads, soups and more, along with sensational desserts and a great selection of microbrews and fine wines. They also feature local organic greens and vegetables when seasonally available and their dough is non-dairy and is made with organically grown flour, with no added chemicals. We really appreciate that!!
Manzanita Market- Fell in love with this little health food cafe, creamery and a local market place, little sister cafe to The Love Apple. They started the Market to offer the TAOS community a space to be a community and to offer real food from the community of local farms and ranchers. They make their ice cream in house in small batches with organic cream, eggs, handmade caramel and seasonal fruits.
Their outside dining alley shares a space with Chokola who are rated top three chocolates in the world! They are an organic cafe and their milk, coffee, tea, meat, oil etc, is all sourced locally when possible and always organic.
All of our goods within the marketplace are made locally by the people of Taos. It’s such a special place!!!!
I love the high desert so much and am just so excited to be living in New Mexico right now! It’s truly enchanting and pulls at my heart strings each time I visit!
