Creamy Cajun Chicken And Wild Rice Soup
As the temperatures drop a bowl of hot chicken and rice soup is the perfect comfort food! This Cajun Comfort Chicken & Rice Soup by The Defined Dish is everything you crave with flavorful and juicy chicken, creamy broth, fresh vegetables and spicy Cajun seasoning. I switch this recipe up up a little to tailor it more for the ingredients I love!
Ingredients
4 Tablespoons Butter, Divided
1 Small Yellow Onion, Chopped
3/4 Cup Celery, Chopped
3/4 Cup Carrots, Chopped
2 Cloves Garlic, Minced
1/4 Cup All-Purpose Flour
3 Tablespoons Tonyβs Original Cajun Seasoning
1 Tablespoon Fresh Thyme Leaves
1 Jar (4 Ounces) Diced Pimentos
4 Cups Low-Sodium Chicken Broth
1 1/2 Cups Whole Milk
2 Cups Cooked Wild Rice
2 Cups Shredded Rotisserie Chicken
Directions
In a large Dutch oven, melt the butter over medium heat.
Add in the onions, celery, carrots and garlic to the pot and cook for 8-10 minutes until softened, stirring often.
Add the flour, Seasoning and thyme leaves and continue to cook for 2 minutes, stirring often.
Add the pimentos, broth and milk and reduce the heat to a simmer.
Cook uncovered, stirring occasionally for 8-10 minutes until the mixture thickens.
Add the rice and shredded rotisserie chicken and cook until heated through, about 2-3 minutes.
Serve and enjoy!
