Getting SpecTACOlar with CAULIPOWER Cauliflower Tortillas--(Veggie Fajitas Recipe)

I cannot remember a time in my life when I was not extremely big on Mexican food. I could truly eat it every day. I grew up in El Paso Texas in a hispanic family and let’s just say tacos were a weekly staple!!!!

He has been craving fajitas though so I started going down the Pinterest rabbit-hole a few weeks ago searching for cauliflower tortilla recipes. Well all of them called for baking and just looked so time consuming and complicated. I mean…who has time or energy to actually squeeze all of the water out of cauliflower? I just cannot make that kind of time sacrifice.

Lin and I made veggie fajitas tonight and let me tell you -the CAULIPOWER Cauliflower Tortillas are so so delicious!! They are durable too! They did not fall apart or have a weird consistency. I actually 100% would never even know the difference between these and a corn tortilla at a Mexican restaurant. We are just thrilled to now have found a a gluten-free solution to quesadillas, burritos, tacos, Chilaquiles, wraps, and all of our Mexican food favorites! And cheers to fewer calories, less fat, more fiber, and vitamin C!!!! It was so incredible actually seeing Lin’s face light up when he took the first bite. It has been a struggle creating good food on his protocol.

Ingredients:
3 tablespoons avocado oil
3 tablespoons freshly squeezed orange juice
2 cloves garlic, minced
2 teaspoons chili powder
2 teaspoons ground cumin
Fine sea salt and freshly ground black pepper
1 red bell pepper, seeded and thinly sliced
1 yellow bell pepper, seeded and thinly sliced
1 orange bell pepper, seeded and thinly sliced
1 small yellow onion, halved and thinly sliced into half-moons
4 to 8 CAULIPOWER Cauliflower Tortillas
Guacamole for serving
1⁄4 cup fresh cilantro leaves, for serving
Directions:
Preheat the broiler with a rack placed about 4 inches from the heating element. Place a large rimmed baking sheet on the rack to preheat along with the broiler.
In a large bowl, combine the veggies, oil, lime juice, orange juice, garlic, chili powder, cumin, salt, and black pepper. Toss the veggies to coat, then marinate for 15 minutes, or cover and store in the fridge for up to 1 day.
Carefully remove the hot baking sheet from the oven and arrange the bell pepper and onion mixture in a single layer on it. Broil for 10 minutes, until the vegetables are crisp-tender.
Serve the fajita filling with the tortillas, guacamole, cilantro, and lime wedges on the side.
So delish! So simple too! It’s a healthy sheet pan dinner that you can feel good about!!!
