Sheet Pan Sausage With Acorn Squash And Roasted Grapes- Whole 30
The sweetness of squash and roasted grapes is the perfect counterpoint to savory sausages. And this meal feels so incredibly satisfying!!!!
Adapted this recipe from The Defined Dish….you can add yellow onion and serve with lemon wedges!
INGREDIENTS:
3 cups acorn Squash
2 cups red seedless grapes
3 tablespoons extra. virgin olive oil
1 teaspoon herbs de Provence
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground pepper
1 1/2 pound italian pork sausage
Preheat the
HOW TO
Preheat the oven to 400 degrees and line a large baking sheet with parchment paper.
Place the squash and grapes on the prepared baking sheet. Drizzle with olive oil and sprinkle with the herbs de Provence, salt, and pepper. Evenly coat!
Nestle the sausages in with the veggie and fruit mixture, rubbing the sausages with the olive oil.
Arrange everything in one even layer!
Bake in oven until sausages are cooked through and the squash is tender about 35 minutes! Flip the sausages half way through!
Serve with a homemade Whole30 spicy mustard!
Roasted grapes with herbs de Provence might be my new favorite snack!
