Between writing endless articles, staging photo shoots, and crafting some delicious recipes, there is hardly time to sit down for a relaxing meal during the week. Breakfast is especially tough for me on these busy days. And a Whole30 breakfast..well the cards can sometimes feel stacked against you here if you have not prepared beforehand. When I’m rushing out the door in the morning, the last thing I want to do is prepare a time-intensive meal. That said, I’ve recently been researching a few ways to make a delicious and quick Whole30 approved breakfast for on-the-go girls like myself! My belief is that if you’re going to eat breakfast on the move, at least whip up one that’s healthy—and tasty too! Today I’ll be sharing 1 of my favorite tried-and-true Whole30 busy girl breakfasts. And it really fits in a lunch dinner category too! This recipe also makes a lovely brunch meal for a nice home gathering with friends and family!

This recipe only takes 10-15 minutes, even with the hard-boiled eggs. Yep, you read that right my friends!! EVEN WITH THE HARD-BOILED EGGS.

Whole30 Breakfast Salad With Bacon And Hard-Boiled Eggs Recipe

What You Will Need:

Greens

  • 2 cups baby kale

  • 2 cups baby arugula

  • 1 green onion chopped small

  • 1-2 tablespoons fresh mint leaves

Dressing

  • 1/2 cup fresh raspberries

  • 1 tablespoon white wine vinegar

  • 3 tablespoons avocado oil

  • 3 tablespoons water

  • 8 small fresh mint leaves

Toppings

  • 2 Great Day farms boiled-eggs or more if you wish

  • 4 pieces cooked bacon

  • 1 small avocado

  • 1/4 cup fresh raspberries

HOW TO MAKE:

Toss the greens together. Then plate.

  1. Combine all the ingredients for the dressing in a blender and combine until completely smooth.

  2. Top the greens with boiled eggs, bacon, fresh avo, and raspberries.
