Black Bean AND Sausage Soup Featuring Esposito's Finest Quality Sausage

This recipe is without a doubt my most favorite soup recipes because it’s so easy and so flavorful. And it was so fun dressing this up with Esposito’s products too.

One of my favorite things about this recipe is the leftovers!

The star product today is definitely the sausage. And the Sweet Peppers and Onions in Tomato Sauce from Esposito. A good quality sausage is really going to deepen the flavor and add even more punch to an already-delicious dish.

As Giovanni's sons grew older, they too came to work in the family business. The brothers recognized the growing demand for their high quality products (especially their sausage) so they split the business into two separate entities, a retail butcher shop and a wholesale manufacturer and distributor of sausage. Armand Esposito ran the Wholesale business aka Esposito's Finest Quality Sausage Products.

Now I know you are hungry so here is the delicious recipe for my Black Bean and Esposito Sausage Soup!

INGREDIENTS

  1. 1 pound dried black beans or sub 2 cans of canned black beans if you are in rush but I recommend the dry black beans if you can

  2. 1 pound fresh Esposito pork meatballs ( you can actually use any of Esposito’s sausages here…the sweet italian sausage would be great or a spicy sausage would be fantastic too) Chorizo would be a fantastic option too. Or even Fresh Andouille. But I had the meatballs and broke them down for my soup! They worked perfectly in this recipe.

  3. ½ pound sliced bacon, cut crosswise into ¼-inch-wide strips

  4. 1/2 small white onion, chopped

  5. 1/2 yellow onion chopped

  6. 3 garlic cloves, minced

  7. 1 cup chopped celery (optional-all though I love the texture)

  8. 1 cup chopped carrots (also optional but again love the texture and color)

  9. 1/2 teaspoon dried oregano

  10. 1 teaspoon mexican seasoning

  11. 1 teaspoon red pepper flakes

  12. 4 cups chicken broth or veggie broth

  13. One jar of the Sweet Peppers and Onions in Tomato Sauce from Esposito.

  14. Chopped fresh cilantro to garnish

DIRECTIONS

Rinse beans. In a large saucepan or Dutch oven combine beans and 6 cups water. Bring to boiling; reduce heat. Simmer for 2 minutes. Remove from heat. Cover and let stand for 1 hour. (Or, place beans in water in pan. Cover and let soak in a cool place for 6 to 8 hours or overnight.) Drain and rinse beans.

Return beans to saucepan. Bring to boiling; reduce heat. Simmer, covered, for 1 to 1 1/2 hours or until beans are tender. This is really important! You want tender beans. If you have old beans too-they might never ever get tender so make sure they are not too old.

In nonstick Dutch oven cook the sausage breaking down the meatballs and then add the bacon as well and cook until crispy. Add the onion, and other veggies if using and garlic in oil over medium heat until everything is tender, stirring frequently. Stir in your spices for about a minute or so until everything is fragrant.

Stir in beans, broth, and your Sweet Peppers and Onions in Tomato Sauce from Esposito and bring to boiling.

Ladle into serving bowls. Sprinkle cilantro on each serving if you desire.
