Pulled Pork Sandwiches Using Pork Bracciole From Esposito's Finest Quality Sausages

I sure do miss and love Texas BBQ! What I would give for a pulled pork sandwich from Stubbs! HA! Oh gosh-what I would give to just see a concert again. Le Sigh. Deep deep sigh.

Esposito sent me their Hand Tied Pork Bracciole so I went ahead and satisfied my craving.

Now I know these delicious succulent, lean, pork cutlets seasoned with fresh Parmesan cheese, garlic, parsley, then hand rolled and expertly tied are better suited for braising slowly in wine or stock, or grilled and served with your favorite sauce. But considering I have a 5 pound box there will time for that at a later date ! For now this Bracciole (brah-jhole) is becoming a pulled pork sandwich!

The best part is the slow cooker is going to do all the heavy lifting in this recipe because we have fresh homemade bread to make too!

RECIPE:

Place the Bracciole in a slow cooker with just a tiny bit of good olive oil.

In a bowl, mix the barbecue sauce, chicken stock, apple cider vinegar, brown sugar, spicy mustard, Worcestershire sauce, onion powder, garlic powder, chili powder, remaining ingredients together, and add to the pork.

1 cup cup barbeque sauce

3/4 cup apple cider vinegar

3/4 cup chicken stock

1/2 cup light brown sugar

3 Tbs spicy brown mustard

1 Tbs Worcestershire sauce

1 Tbs chipotle chili powder

1 tsp smoked paprika

1 Tbs onion powder

1 Tbs garlic powder

1 small yellow or white onion

Cover and cook on high for 6 hours, or until the pork falls apart (should fall about easily with a fork).

Remove the pork from the crockpot and shred the meat.

Drain the excess fat, then mix in a little of the cooking liquid before serving. Season with a little salt and pepper.

Serve on delish bread with potato salad or cole-slaw.
