My Favorite Enamelware- Along With Two Recipes For You// Peach Pie & Quiche Lorraine

I am so excited to tell you all about Falcon Enamelware today! I first introduced you to Falcon a few weeks ago when I shared a recipe for a Cherry Clafouti and today I am going to share two more recipes I made recently using my Falcon pieces!

Peach season is the most important season in my world and one of the only things I love about summer!! And this peach pie is going to be a huge hit for your friends and family!

FRESH PEACH PIE RECIPE

Ingredients

For the Crust

  • 1 pie crust using this recipe here.

For the Peach Filling:

  • 6 cups peeled and sliced fresh peaches

  • 1/2 teaspoon lemon zest

  • 1 tablespoon lemon juice

  • 1/2 cup packed light brown sugar

  • 1/4-1/2 cup granulated sugar adjust this based on sweetness of peaches

  • Sprinkle salt

  • Sprinkle nutmeg

  • Sprinkle cinnamon

  • 4 tablespoons all-purpose flour go up to 5 if peaches are really watery

For Assembly:

  • 1/4 cup butter in small slices

  • 1 large egg with 1 teaspoon of water beaten

  • Raw sugar for garnish

Instructions

For The Crust:

  • Follow the instructions for the crust here

For The Peach Filling:

  • In a large bowl, add peaches, lemon zest and juice, both sugars, salt, nutmeg, cinnamon, and flour and toss together until peaches are well coated.

For Assembly:

  • Preheat oven to 350 degrees.

  • Roll out half of the pie dough and place the rest in the refrigerator. Add rolled out pie dough to the bottom of your pie plate.

  • Fill pie dough with peach filling.

  • Dot top of peach filling with butter.

  • Roll out remaining dough and add to the top of the peach filling in a full sheet, in a lattice design or in another decorative design of your choosing.

  • Brush top of pie crust with egg wash and sprinkle with sugar.

  • Bake for 35-45 minutes or until crust is golden brown and inside peach filling is bubbling.

Notes

For the pie crust, make sure your ingredients stay incredibly cold!  This will create the flakiest crust.Depending on the sweetness of your peaches, make sure you adjust your sugar accordingly.

Quiche Lorraine With Bacon and Gruyere recipe

This quiche Lorraine recipe yields a rich egg pie and hails from the mountainous region of Lorraine in northern France. Sufficient for a filling meal in itself, quiche Lorraine has been adapted over the years from a humble custard and bacon pie to the substantial cheese, bacon, and egg creation that it is known for today. We enjoyed this for Bastille Day this year!

Ingredients

  • 1 layer pie dough (use this recipe here , just only make one ball to roll out)

  • 4 slices bacon (crumbled)

  • 4 eggs

  • 1 cup half and half

  • 1/4 teaspoon salt

  • 1/8 teaspoon white pepper

  • 1/8 teaspoon freshly grated nutmeg

  • 1 cup Gruyere cheese (shredded)

Steps to Make It

Preheat the oven to 375 F.

Fit the pastry into a deep-dish pie pan.

Sprinkle the bacon onto the bottom layer of the pastry.

Beat together the eggs, half and half, salt, pepper, and nutmeg.

Pour the eggs over the bacon and sprinkle with the shredded cheese.

Bake the quiche for 45 to 50 minutes, until the eggs are set in the middle.

Cool slightly and serve.

How can I clean my Falcon Enamelware?

Lemon juice can remove stains from Falcon enamelware products, such as tea stains on mugs. Soaking the products in warm soapy water will help remove baked on food, but avoid using abrasive sponges or brushes as this may scratch the surface. Coating your pans in a light layer of oil before cooking can help with cleaning after use. 


If my enamelware chips can I still use it?

Yes. Just like any other ceramic, the outer porcelain layer can chip if dropped, revealing the steel beneath it. When this happens the steel below naturally oxidises and the enamelware remains safe to use. Plus, in our opinion, it gains a little more character.
