Savory Beef And Spinach Tart Made With Homemade Puff Pastry Recipe

This is the most delicious tart!!!

For The Puff Pastry

1-1/4 cups of all purpose French flour
1 stick of ice cold butter cut in small pieces
1/4 cup ice cold water ( important it’s super cold)
Pulse flour & salt in food processor about 4 pulses.
Then add butter, pulse until flour feels almost like sand.
Start processor & slowly add water until mixture comes together. Dough will feel like clay.
Knead dough 2 or 3 times on a lightly floured surface. Form a disk wrap in plastic & chill for 30 minutes before using. ( not more than that either- it’s very specific) ha!

For The Filling

3/4 pound lean ground beef (90% lean)
1/2 small purple onion, finely chopped and 1/2 small white onion
2 large eggs
3/4 cup sour cream
1/2 teaspoon salt
1/4 teaspoon pepper
3/4 cup shredded part-skim mozzarella cheese
2/3 cup shredded Parmesan cheese
1/3 cup cherry tomatoes
1 tiny handful of fresh spinach
1/4 cup coarsely chopped fresh basil
1 teaspoon garlic powder
1 teaspoon minced fresh rosemary or 1/4 teaspoon dried rosemary, crushed
toppings:
2 tablespoons pine nuts, toasted

DIRECTIONS

Preheat oven to 400
In a large skillet, cook beef and onions over medium heat 5-7 minutes or until beef is no longer pink, breaking up beef into crumbles. Add spinach and tomatoes and cook them down!Remove from heat.
In a small bowl, whisk eggs, sour cream, salt and pepper until blended. Stir in cheeses - chopped basil and rosemary plus garlic powder ! Stir into beef mixture; pour into tart shell.
Bake on a lower oven rack 15-20 minutes or until crust is golden brown and filling is set.

Just before serving, add pine nuts !
